
The Plaza Cafe
Since I moved to California, I have been trying to recreate
the curry from the best Indian Restaurant in the world: The Plaza
Cafe in Manchester. The Plaza was (it is no longer with us, sadly)
a scruffy place that defined "hole-in-the-wall"; not one stick of
furniture matched and they had a single menu for the whole place to
share. The Plaza made a Biryani that was simply superb.
The sauce that was served with the dish ranged in temperature as
follows: Mild, Medium, Hot, Killer, Suicide, Immolation, Goodbye, I
told you not to eat that, Charlie's Special and, hottest of all:
"English Gravy". The Suicide was enough for me. My Dad
had Immolation and used my Suicide to cool down with! But in
spite of the heat, the flavor was out of this world.
A small dedicated crew is still trying to recreate the Plaza
sauce recipe. It is still not perfect but we are working on
it! If you want a copy of the recipe thus far, let me know.
